Soy - The Miracle Bean
Originally the egg-rich bean hails from Asia. The Buddhist monks had soya milk curdled and called the resulting "cheese" tofu. In Japan, a meal without soy products is unthinkable: besides tofu, miso soup or soya sauce belong to almost every meal. As a foodstuff of the future, the soybeans, thanks to their high protein content, could help to ensure the nutrition of the growing world population. Researchers breed new varieties, which can also be cultivated in climatically difficult regions.
