With master chef Hirohisa Koyama, the film introduces westerners to the culinary soul of Japan: the Kaiseki Menu. Shortly after opening his own restaurant in Tokyo in 1976, he began devoting himself to popularizing traditional Japanese cuisine around the world. The Nippon Culinary Exchange Institute is the base from which he continues to pursue his goal of making Japanese recipes and their underlying philosophy known through the world.
